Calculates enzyme kinetics parameters Km and Vmax from substrate concentration and reaction velocity data using the Michaelis-Menten equation v = Vmax[S]/(Km+[S]). Km is the substrate concentration at half-maximal velocity — Lineweaver-Burk double-reciprocal plots linearise the data for parameter fitting.
