sci.food-texture-TPA-hardness Calculator
Calculates texture profile analysis (TPA) parameters (hardness, cohesiveness, springiness, chewiness, gumminess) from double-compression force-time curve. TPA hardness = peak force in first compression (N) — chewiness = hardness × cohesiveness × springiness, the most comprehensive single-texture metric for solid foods.
Inputs
- F Max N
- Push or pull (N). F = ma. Net force determines acceleration. Account for all forces including gravity and friction.
- Area First N S
- Two-dimensional surface extent (m²). For complex shapes, break into simpler sub-shapes and sum.
- Area Second N S
- Two-dimensional surface extent (m²). For complex shapes, break into simpler sub-shapes and sum.
- F Start 2Nd N
- Push or pull (N). F = ma. Net force determines acceleration. Account for all forces including gravity and friction.
